Recipe for Qaboli Rice
Ingredients
- 1/2 kilo meat with bones
- 1/2 cup yogurt
- 2 chopped tomatoes
- 1 cinnamon stick
- 3 whole cloves
- 1 tablespoon garlic paste
- 2 tablespoon tomato paste
- 1 teaspoon cumin powder
- Water (measurements are in method)
- Salt to taste
- 1 teaspoon garam masala
- 1 green chili
- 3 whole cardamoms
- 2 chopped onions
- 1/2 tablespoon ginger paste
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder (optional)
- 2 cups of American rice
Cooking Directions
Fry onions with cardamom, cinnamon, and clove. When onion is transparent, add chicken.
When chickens color changes to light brown, add the tomato, garlic, and ginger.
Keep stirring for 2 minutes then add 1 1/2 cup water, cover until water evaporates.
Mix the tomato paste, yoghurt with the rest of spices together, add this paste to the chicken.
Stir the previous mixture for 3 minutes then add 4 cups of water let it boil for 1 minute.
Add the salt then the rice, let it boil once then cover properly and let it cook on very low
heat till rice the cooked.
