Recipe for Summer Salad
Ingredients
- 4 cups cherry tomatoes or grape tomatoes (halved)
- 1 small red onion (thinly sliced)
- 2 garlic cloves (minced)
- 2 ripe avocados (seeded, peeled, and diced)
- 1 tablespoon minced jalapeno pepper (seeded)
- 1 tablespoon caper
- 1/2 teaspoon Dijon mustard
- 1 lemon, juice of
- 1 lime, juice of
- 1 bunch fresh cilantro or parsley (chopped)
- 1/2 teaspoon kosher salt
- ground black pepper
Cooking Directions
Place the tomatoes, avocados and red onions in a bowl.
Carefully mix together the remaining ingredients and pour over the tomato mixture.
Chill for about 30 minutes to let the flavors blend; serve.
