Recipe for Thai Chicken Red Curry

Ingredients

  • Chicken with bones 1/2 kg
  • Coconut milk 1 cup
  • Red curry paste 2-3 tbsp
  • Fish sauce 2-3tbsp
  • Mushrooms 1 cup
  • Lemon leaves 4-5
  • Garlic 5-6 cloves
  • Crushed black pepper 1/2tsp
  • Chopped red chilies 2-3
  • Basil leaves 10-12
  • Oil 3-4 tbsp
  • Salt as required

Cooking Directions

Heat 3-4 tbsps oil in a pan and fry 5-6 cloves of garlic along with ½ kg chicken.

When the color of the chicken changes add 2-3 tbsp red curry paste , 2-3 tbsp fish sauce , 4-5 lemon leaves , 1/2 tsp crushed black pepper,2-3 red chilies 1 cup mushrooms and salt as required.

Cook for 4-5 minutes. Now add 1 cup coconut milk and 1 cup water and cook until the gravy thickens.

Transfer the gravy into a serving dish , garnish with chopped red chilies and basil leaves.
