Recipe for Lauki ki Kheer
Ingredients
- Bottle Gourd (Lauki) 2 cups (peeled & grated)
- Milk 7 cup
- Cashew nuts 1/2 cup (grind to a paste with milk 1/3 cup)
- Sabudana 5 tbsp (soaked in water for 20 minutes)
- Sweetened Condensed Milk 397g
- Sugar 1/2 cup
- Khoya 150g
- Pistachio 30 (sliced)
- Kewra water 2 tbsp
- Green food colour 1/4 tsp
Cooking Directions
In a pan add lauki, water 1 cup and cook on low flame till it gets cooked and no liquid is left, keep aside.
Boil the milk add sabudana, and cook for 10 to 15 minutes on low flame till it is tender.
Then add cashew nut paste, khoya, condensed milk mix well with a whisk.
Then add kewra water, food colour, cooked lauki, sugar mix well and cook on low flame, for 15 to 20 minutes.
Add the pistachio and leave a little for garnishing.
Garnish with remaining pistachio and serve hot or cold.
