Recipe for Mutton Handi
Ingredients
- Salt 1 tbsp
- Chili powder 2 tbsp
- Coriander seeds 2 tbsp
- Black pepper powder 1 tsp
- Ginger powder 1 tsp
- Garlic powder 1 tsp
- Nutmeg grinded ½ tsp
- Mace grinded ½ tsp
- Green cardamom grinded ½ tsp
- Deghi mirch 2 tbsp
- Aniseed 1
- Turmeric 1 tsp
- Cumin 1 tbsp
- White cumin 1 tbsp
- Green cardamom grinded 1 tsp
- Citric acid ½ tsp
- Almonds blanched 15
- Desiccated coconut 2 tbsp
- Ingredients for Mutton Handi:
- Boneless Mutton tiny cubes 1 kg
- Tomato puree ½ cup
- Onion 2 medium sliced, boiled in 1 cup of water and grinded
- Yogurt 1 cup
- Coriander leaves 2 tbsp chopped
- Cream ½ cup
- Butter 4 ounce
- Oil ½ cup
- Handi masala 4 tbsp
Cooking Directions
FOR HANDI MASALA:
Grind all together very finely, sieve and fill in airtight container, and use as required.
METHOD for Handi:
Boil mutton in 3 cups of water till nearly tender, mix handi masala in yogurt and apply to mutton cubes, boil onions and blend.
Heat oil, add marinated mutton, cook for 5 mins.
Add tomato puree and onion paste, cover and cook for 15 to 20 mins.
Add in butter, coriander leaves, cream, and cook for 10 mins till gravy thick.
Serve with hot nan.
