Recipe for Nargisi Koftay
Ingredients
- For Koftay:
- Eggs 8 (boiled)
- Beef/mutton 1kg (without fat and finely cut)
- Onions 2 (browned)
- Poppy seeds 2 tbsp
- White Cumin 1 tsp
- Almonds 6(sautéed)
- Whole black pepper 8
- Salt to taste
- Roasted Chickpeas powder 2 tbsp
- Black cumin 1 tsp
- Small cardamom 8
- Red chili 1 tsp (crushed)
- For curry:
- Red chili 1 tbsp (ground)
- All spice powder 1tsp
- Yogurt 1/2 cup
- Onions 3 (finely chopped)
- Oil 1 cup
- Coriander 2 tbsp (powdered)
- Green cardamom 4
- Ginger garlic paste 1 tbsp
- Salt to taste
Cooking Directions
For Koftay:
In a chopper add raw meat, brown onions and all the Koftay masala mentioned above in a chopper.
Grease your hand, take a bit of the meat mixture and spread on your palm.
Place the egg onto the flattened meat and wrap it around.
Repeat the same procedure with the rest of the eggs.
Now take a frying pan and heat some oil.
On a low flame fry the Koftay till they turn golden brown.
For curry:
In a large skillet heat oil and fry onions till they turn golden brown.
Now blend together fried onion and yogurt.
In the same skillet fry cardamoms for a couple of minute, add ginger garlic paste, coriander, all spice powder, red chili, salt and then yogurt mixture.
When oil forms a layers slowly add in the Koftay.
Pour in a warm glass of water and simmer for minutes.
To serve take a large serving dish, first pour the masala then slice the Koftay lengthwise.
Place them on top of the masala.
