Recipe for Mutton Adla Biryani
Ingredients
- Mutton adla 1 kg big pieces
- Ginger 2 tbsp chopped
- Garlic chopped 2 tbsp
- Yogurt ½ cup
- Cloves 6
- Green cardamom 8
- Black pepper 8
- Salt 1 ½ tsp
- Water 4 cups
- Saffron ½ tsp
- Kewra water 1 tbsp
- Sela Rice 750 gm soaks for 2 hours
- Ghee 1 cup
- Yogurt 1 cup mixed with ¼ tsp zarda color
- Ginger julian 1 tbsp
- Cumin whole 1 tbsp
- Mace grinded ¼ tsp
- Green chilies 15 small ones
- Mint 1 bunch
- Coriander half bunch
Cooking Directions
Boil adla in 4 cups water with 2 tbsp chopped ginger, 2 tbsp chopped garlic, ½ cup yogurt, 6 cloves, 8 green cardamom, 8 black pepper, salt 1 ½ tsp, cook till tender and 1 cup stock left.
Now remove the meat to the corners of the pan.
Make a hollow in the centre, spread the colored mix yogurt on the mutton pieces only add cumin whole, mace powder, 15 green chilies whole, 1 bunch mint leaves, coriander leaves, ginger julian.
Put the rice on hollow first then spread rice on mutton to cover mutton well, cover and leave it on dum.
When steam start to come add the ghee, mixed with half cup water saved from the boiled rice with crushed saffron and kewra mixture, leave it on dum for 20 minutes.
Mix biryani and serve.
