Recipe for Almond Crunch Cake
Ingredients
- Flour 150 gm
- Egg 6
- Sugar ½ kg
- Baking powder 20 gm
- Butter 3 tbsp
- Vanilla essence few drops
- Butter 200 gm
- Almond 100 gm
- Pistachio 50 gm
- Fresh cream 200 ml
- Icing sugar ½ cup
- Sugar syrup ½ cup
Cooking Directions
In a bowl beat together 250 gm sugar and 6 eggs.
Add few drops of vanilla essence, 200 gm butter, 20 gm baking powder and 150 gm flour. Mix well.
Now pour the batter in a greased cake mold and bake in a preheated oven on 180 degrees for 35 – 40 minutes.
In a pan put 250 gm sugar and cook till it is caramelized.
Add 100 gm almond and 50 gm pistachios. Keep aside till firm.
Now crush with rolling pin, keep aside.
Beat together 200 ml fresh cream, 200 gm butter and ½ cup icing sugar.
Remove cake sponge from the oven, keep aside to cool.
Cut into 3 layers, spread ½ cup sugar syrup on 1st layer.
Then top with whipped butter cream and spread very well.
Now put the other cake layer on top. Similarly spread the butter cream and top with the 3rd cake layer.
Now spread the remaining butter cream mixture on top and all around.
Sprinkle crushed caramel on top. Serve chilled.
