Recipe for Spiced Rice with Lentils

Ingredients

  • 8 oz. Patna or Basmati rice
  • 4 oz. yellow dhal
  • 4 oz. potato 4 oz. onions
  • 1 pint (U.S. 2 ½ cups) water
  • salt to taste oil for frying
  • 2 oz. each currants, pistachios, almonds
  • Pinch of chilli powder
  • ½ teaspoon ground coriander seeds
  • ½ teaspoon ground cummin seeds
  • Sprig curry leaves
  • or 2 bay leaves
  • 2 green chillis
  • 2 I-inch sticks cinnamon

Cooking Directions

Wash rice and dhal well in running water.

Soak separately for at least 30 minutes.

Meanwhile cube potato and slice onions.

Now boil the rice in the water for five minutes before adding the dhal, add salt and cook gently till done adding more water if necessary.

Fry half the onions and all the potatoes and add to the rice.

Lightly fry the currants and nuts and add them too.

Add the chili powder, coriander and cummin.

Stir well and remove from the heat.

Fry the rest of the onions, curry leaves and chopped green chili and add to the rice.

Put in the cinnamon and replace the pan on a low heat and cook for a further five minutes.
