Recipe for Fruit Cheesecake
Ingredients
- Fruit cocktail 1 tin
- Cottage cheese 300 gm
- Fresh cream 300 gm
- Yoghurt 125 gm
- Sugar 250 gm
- Gelatin powder 4 tbsp
- Lemon juice 1 tbsp
- Plain cakeas required
Cooking Directions
Cut the cake into thin slices, spread in the bottom of a cake mold.
Mix together 3 – 4 tbsp water, 4 tbsp gelatin powder and 1 tbsp lemon juice. Now cook for a few minutes.
Finely chop the fruit cocktail and keep aside.
Blend together 300 gm cottage cheese, 300 gm fresh cream, 250 gm sugar and 125 gm yogurt.
Remove cheese-yogurt mixture in a bowl, add in gelatin mixture.
Spread chopped fruits on top cake sponge in cake mold, now pour the cheese-yogurt mixture on top of fruits.
Freeze for 20 – 25 minutes till firm. Then remove from freezer, cut into wedges and serve.
