• 2 chicken breasts, chopped into cubes
• olive oil
• splash of soy sauce
• 1 onion
• 1 can mushroom slices
• 1 package spinach
• 1 cup mozzarella cheese
• 1 tomato

Preheat your oven to bake at 350 degrees. Chop spinach, drain mushrooms, grate mozzarella cheese, and thinly slice tomato.

Chop chicken into small cubes (about one inch). Chop onion coarsely. Saute chicken and onion with olive oil and a splash of soy sauce in a frying pan until tender. Remove from pan and add chicken as first layer in Pyrex baking dish.

Layer mushrooms, then spinach, then crumbled bacon, and then cheese on top of chicken and onions. Place thin tomato slices on top of the cheese for a nice color.

Cover Chicken Spinach Dish with aluminum foil. Bake Chicken Spinach dish at 350 degrees for 25 minutes, or until cheese is melted and bubbly.
