Recipe for Aloo Masala
Ingredients
- Boiled Potatoes 4 large
- Onion chopped 1 medium
- Green Chilies chopped 2 medium
- Cumin powder 1 tea spoon
- Turmeric powder 3/4 tea spoon
- Coriander powder 1 tea spoon
- Cumin seeds 1 tea spoon
- Olive Oil 1 table spoon
- Salt to taste
- Water if needed
- Curry leaves to garnish
Cooking Directions
Peel and mash boiled potatoes to make Aloo Masala.
Place a non-stick pan over medium heat.
Add oil and cumin seeds.
When seeds sputter add chopped onions and fry until transparent.
Add spices and chopped chilies, stir.
Now add mashed potatoes and mix thoroughly.
Add a little water, if necessary to mix nicely, let cook for about 5 minutes.
Garnish with curry leaves.
Makes a great filling for Dosa, Paratha & Sandwiches. Aloo
Masala can also be used as a side dish.
