Recipe for Spicy fire-roasted vegetables
Ingredients
- Bell pepper 2 large
- Zucchini 2 large
- Baby carrots 200 gm
- Chili sauce 1 table spoon
- Balsamic vinegar 2 table spoon
- Salt to taste
Cooking Directions
Chop bell peppers into large 1-2 inch pieces.
Slice zucchini into 1/2 inch thick slices.
In a bowl take baby carrots and cut vegetables.
Add chilli sauce, balsamic vinegar and salt and toss.
Leave to marinate for an hour.
Meanwhile pre-heat your Grill or Barbecue.
Take a ''Barbecue Wok'' (pan with holes in it).
Add marinated vegetables to it and roast over an open flame.
Serve as a side to a grilled meat dish or burgers.
