Recipe for Baigan Bharta

Ingredients

  • 2 eggplant (into small slices)
  • 5 green chillies
  • 1 onion slices
  • 6 tomatoes chopped
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin seeds
  • 3 red dried chilli
  • to taste salt
  • 1 tsp tamarind paste
  • 1 tbsp ginger and garlic paste
  • as required oil
  • 1/4 cup coriander leaves
  • 1/2 cup water

Cooking Directions

Add oil in a pressure cooker. Add sliced egg plant, tomatoes and the major ingredients into cooker.

Then add salt, ginger garlic paste, turmeric powder and tamarind paste,half cup of water.

Turn on heat and close the cooker. Once pressure is built simmer it and cook for five minutes.

Release pressure and open the cooker. Turn on the heat and cook until water dries. When oil comes up your dish is ready to serve

Garnish with coriander leaves. Serve hot with naan
