Recipe for Brown Rice Vegetable Pilaf
Ingredients
- Brown basmati rice 2 cups
- Rice bran oil 2 tablespoons
- Bay leaf 1
- Cloves 2-3
- Cumin seeds 1 teaspoon
- Cinnamon 1 inch stick
- Salt to taste
- Green peas(shelled) 1/2 cup
- Carrots(diced) 2 medium
- French beans(chopped) 10-12
- Cauliflower 1/4 medium
- Button mushrooms(halved) 6-7 medium
- Green chillies(slit) 2
- Tofu(cubed) 100 grams
Cooking Directions
Soak brown rice in four to five cups of water for one hour.
Drain and set aside.Heat rice bran oil in a deep pan.
Add bay leaf, cloves, cumin seeds and cinnamon.
Add drained rice and salt and saute for one to two minutes.
Add five cups of water. Bring to a boil.
Add green peas, carrots, French beans, cauliflower, mushrooms, green chillies and tofu.
Stir and mix. Bring to a boil. Reduce heat to low, cover and cook till done. Serve hot.
