Recipe for CREAMY TARRAGON EGGS
Ingredients
- 8 eggs
- 1 Tbsp chopped fresh tarragon
- 1/4 tsp salt tsp black pepper
- 3 oz cream cheese, cubed
- 1 Tbsp unsalted butter
- Buttered toast
- Arugula, or other greens
Cooking Directions
In a bowl, whisk together eggs, tarragon, salt, and pepper. Stir in cream cheese, separating bits if necessary.
Melt butter in a 10-inch nonstick skillet over medium heat until foam subsides.
Pour egg mixture into skillet and cook, stirring gently, until eggs are creamy and softly set, about 5 minutes.
Season with salt and pepper, if desired. Serve with buttered toast and greens of your choice.
