Recipe for Apple and Peach Pie Rolls
Ingredients
- For the dough:
- 1 and ½ cup all purpose flour
- ½ cup soft butter, chilled and diced
- ½ teaspoon salt, optional, use only if your butter is unsalted
- 1/3 rd cup of ice water
- For the pie filling:
- 1 cup of each Apple and Peach, peeled, pitted and thin sliced
- ¼ cup of water for each filling
- ½ cup castor sugar for each filling
- 2 cinnamon stick or 1/2 teaspoon cinnamon powder
- 1 nutmeg, cracked into two or 1/2 teaspoon nutmeg powder
- 2 teaspoon lemon juice
- Some melted butter
Cooking Directions
The Dough:
Sieve the flour and salt together in a large bowl
Cut in the butter and mix with your hand till the mixture looks like loose crumbs
Then add only one or two teaspoon of ice water at a time and slowly knead into soft dough. Wrap up in a plastic bag and put in the refrigerator for 4-5 hours or overnight.
The filling:
Mix one fruit at a time with ¼ cup of water, ½ castor sugar in a saucepan and put on stove.
Add a cinnamon stick and ½ of a cracked nutmeg and reduce till the apple and peach respectively are soft and the caramel is reduced to a thick consistency.
Follow the same process for each fruit separately , remove from stove and add a teaspoon of lemon juice to each and spread on a wide dish and set aside for cooling.
