Recipe for Fried Eggs With Spinach On Bread
Ingredients
- Eggs 8
- Spinach(washed) 400 gm
- Tomatoes(cut into halves) 4
- Olive oil 2 1/2 tbsp
- Salt & pepper to taste
- Chives(chopped) 1 tbsp
- Butter 4 tbsp
- Brown bread 8 slices
Cooking Directions
Cook the spinach in a covered pan for 2-3 minutes or till it wilts.
Fry tomatoes in 1/2 tbsp olive oil, sprinkle with seasoning and chives, keep them aside.
Heat 1/2 tbsp butter with 1/2 tbsp olive oil, gently slip the eggs into the pan 2 at a time, sprinkle a little water and cover the pan.
Remove the lid after about a minute and a half. Butter the brown bread slice, put spinach on them, and top each slice with a fried egg.
Serve two slices in individual plates with tomatoes on the side.
