Recipe for Crepe Lasagna
Ingredients
- For Crepes:
- Flour 2 cups
- Milk 2 cups
- Eggs 2
- Melted Butter 3 tbsp
- Oil as required
- For Sauce:
- Mushrooms (chopped) 3-4
- Spinach (blanched and chopped) 250 grams
- Onion (chopped) 1
- Oil 2 tsp
- Garlic Cloves (chopped) 2
- Tomato Puree 1 1/2 cups
- Red Chilli Flakes 1/2 tsp
- Basil 1/2 tsp
- Oregano 1/2 tsp
- Tomato ketchup 2-3 tsp
- Cream 1 cup
- Cheddar Cheese (grated) 1-2 cups
- Salt to taste
Cooking Directions
To make crepes mix together flour, milk, eggs, butter until no lumps for about 2 minutes.
In a frying pan swirl a few tablespoons of oil to coat pan then remove so only a few drops remain.
On medium heat add enough batter so that it just coats entire frying pan lightly.
Cook only on one side and remove from frying pan onto a plate, continue with the rest of the batter and set aside.
For sauce add oil to saucepan and sauté garlic for a minute.
Add onions and cook until translucent.
Add mushrooms, puree, chilli flakes, basil, oregano and mix.
Add spinach, tomato ketchup, stir well then take off the heat and cool.
Once the mixture cools add cream and stir well.
Cut the about 4 strips out of each crepe and set aside.
For layering of lasagna in pan (8” by 8”) first spread 3-4 tbsp sauce, then 1-2 tbsp cream and then grated cheese (to your liking).
On top of the cheese lay the crepe strips to cover it completely.
Spread the sauce, cream and then cheese again.
For final layer spread sauce, cream, cheese and for final touch add chilli pepper flakes.
Bake the completed lasagna in the oven for 20-25 minutes until bubbling hot on 180 degrees.
