Recipe for Pomfret Khichri
Ingredients
- Rice 1 lb
- Pomfret or any white fish 1 lb
- Cloves 12
- Sticks cinnamon 2
- Cardamoms 4
- Turmeric powder 1 tsp
- Large onions 2
- Tomato 1
- Clove garlic 4
- Small pieces ginger 1
- Garam masala 1/2 tsp
- Chili powder 1/2 tsp
- Raisins 1 oz
- Almonds 1 oz
- Lemon 1
- Ghee 4 tbsp
- Salt to taste
Cooking Directions
Clean fish and cut into large cubes. Heat 2 tbsp ghee and add the cinnamon, cardamoms, turmeric and one chopped onion.
Add the rice and fry till the rice is a golden brown.
Now cover the rice with water until the water level is 2 fingers above the rice level. Let it cook on a low fire.
At the same time, heat 2 tbsp ghee and slice and fry the remaining onion till brown with the garlic, ginger, garam masala and sliced blanched almonds.
Add the fish cubes and chopped tomato and sprinkle lemon juice over it.
When the fish is cooked keep on one side, till the rice is nearly cooked.
Then add it to the rice and mix, together with raisins and salt to taste.
Keep on a low heat till the rice is done, taking care to see that it does not get burnt at the bottom.
This khichri should be served with curd and garnished with slices of hard boiled eggs.
Note: A traditional method of measuring water required for cooking rice.
This is not always correct as it depends on the equality of rice used.
