Recipe for Cheesy Spinach Corn Enchiladas
Ingredients
- Chicken in small cubes (cooked) 1 cup
- Onion chopped 1 medium
- Spinach blenched ¼ cup
- Sour cream ½ cup
- Margarine 1 tbsp
- Paprika 1 tsp
- Green chilli (chopped) 1 tbsp
- Parsley 1 tbsp
- Salt 1 tsp
- Pepper 1 tsp
- Salsa ¼ cup
Cooking Directions
Heat margarine fry onion. Add green chilli, pepper, and paprika, salt.
Now on low flame add cream, chicken, chicken stokes, spinach.
Put 2-tea spoon mixture on tortilla bread. Roll up and place seam side down in baking dish, tap with shredded cheese and salsa corner with foil bake at 180o C for 20 minutes.
