Recipe for Tomato Rice
Ingredients
- Tomatoes-4
- Basmati rice-2 cups
- Onions-1
- Garlic-6 cloves
- Ginger-3 (1 inch pieces)
- Green chillies-2
- Peppercorns-5
- Cinnamon sticks-2
- Cloves-4
- Cardamom-2
- Bay leaf-1
- Cumin powder-1 teaspoon
- Ghee-1 tablespoon
- Salt as per taste
Cooking Directions
Soak the rice in a bowl of water for half an hour after washing properly. Squash the tomatoes to pulp.
Make a rough paste of onions, garlic and ginger.
Take a deep microwavable bowl and heat ghee for 2 minutes in it.
Add the bay leaf, pepper, cinnamon sticks, cloves and cardamom to the melted ghee and microwave for 2 minutes more for the flavours to bleed.
Add the onion, and ginger garlic paste; mix well and microwave for 2 minutes.
After this add the tomato pulp with salt; stir and microwave for 2 minutes.
Add a dash of cumin powder, chopped green chillies and the rice, mix well and microwave for another 2 minutes.
Now add 4 cups of water; cover and cook for 16-18 minutes
at 640 degree centigrade.
