Recipe for Easy Tomato Lentil Stew For Brunch
Ingredients
- 1 cup lentils (dry)
- 6 cups water
- Chopped cilantro
- 2 tomatoes (chopped)
- 1 onion chopped
- 1 cup spinach (finely chopped)
- Salt to taste
- 1 tsp cumin seeds
- tsp turmeric
- 1 tsp ginger paste
- 2-3 garlic cloves
- 2-3 tsps lemon juice
Cooking Directions
Pressure cook the lentils with little tomatoes (about 1/2 cup), turmeric and salt. Beat well into puree.
Heat a thick bottomed vessel and add all the above ingredients.
When the mixture is boiling, add the boiled lentils, peeled tomatoes and stir well.
Turn off the stove after 10 minutes and add a few drops of lemon before serving. Tasty tomato lentil stew is ready.
