Recipe for Stuffed Tomatoes
Ingredients
- Tomatoes (large size, should be red and firm) 8
- Mince meat 1/2 kg
- Ginger and garlic paste 1 tsp
- Red chili powder 1 tsp
- Turmeric powder 1/2 tsp
- Nigella seeds (kalonji) 1/2 tsp
- Fenugreek seeds (methi) 8
- Lemons 2
- Onion (large size, finely chopped) 1
- Salt to taste
- Fresh coriander (finely chopped) 1 bunch
- Green chilies finely chopped 4
- Cooking oil 3 cups
Cooking Directions
Heat 2 tbsp of oil in a pan.
Add mincemeat and all the spices and cook on medium heat till all the water dries.
Stir for few minutes.
Remove from heat and leave to cool.
Squeeze lemon juice on it.
Now cut tomatoes 1/4 from the top leaving 3/4 for the stuffing.
Remove all the pulp from the tomatoes.
Stuff each with the mince meat, close each tomato carefully, either tie it with thread or seal both the sides by inserting toothpicks on its sides.
Heat oil in a frying pan. Fry one tomato at a time.
Place tomatoes in a pan and cook further on low heat for about 10 minutes.
