Recipe for Chocolate Filled Cookies
Ingredients
- Butter ¼ cup (softened)
- Sugar ½ cup (powdered)
- Brown sugar ¼ cup (packed)
- Egg yolks 2
- Vanilla essence or extract 1 tsp
- Flour 1, ½ cup
- For Filling:
- Heavy cream ½ cup
- Semi-sweet chocolate chips 1 cup (6oz)
Cooking Directions
Beat together butter, powdered sugar and brown sugar until smooth.
Add in egg yolks and vanilla essence, beat again till light and fluffy.
Fold in flour and mix thoroughly.
Roll dough into a ball and wrap tightly in plastic wrap.
Refrigerate the dough ball for 1 hour.
For Filling: Gently heat cream in a saucepan until it starts to simmer.
Add chocolate chips and stir till melts. Remove from heat.
Flour the rolling pin and work surface.
Take out the dough ball and roll out dough 1/4" thick.
Cut into 2" circles with a cookie cutter and place on ungreased cookie sheet 1" apart.
Drop chocolate filling in center of each cookie dough circle and top with another dough circle.
Seal the edges using fork tines.
Bake in a pre-heated oven at 175 C for 15 - 16 minutes or till light brown.
Cool on rack.
You cab sprinkle white sugar on hot freshly baked cookies to make them sugar coated cookies.
