Recipe for Shahi Rangeen Biryani
Ingredients
- 500 gm chicken
- 500 gm boiled rice
- 250 gm plain yogurt
- 50 gm dried plum
- 1 cup mix dry fruits
- 1/2 cup vegetable oil
- 2 onions, thinly sliced
- 2 potatoes, cut into 2 inch cubes
- 1 tbsp ginger garlic paste
- 4 green chilies
- 4 star anise
- 2 tsp salt
- 2 tsp chili powder
- 1 tsp kewra essence
- 1 tsp cumin seeds
- 1 tsp black pepper
- 1 tsp turmeric powder
- 1 tsp all spice
- 1/2 tsp nutmeg & mace powder
- 1 bunch of mint leaves
- a pinch of yellow food color
- a pinch of green food color
Cooking Directions
Marinate chicken with yogurt, ginger garlic paste, chili powder, salt, turmeric, ground nutmeg & mace, star anise, dried plum and all spice.
Keep aside for 30 minutes. Heat oil in a deep wok or skillet.
Put onions in hot oil and fry for 3-4 minutes or until golden brown.
Take it out from the and keep aside. Put potato cubes in the remaining oil. Fry for 8-20 minutes or until golden brown.
Them remove from the oil and keep aside. Now put the marinated chicken in remaining oil.
Cover and cook for 10-12 minutes or until its change color.
Then add fried potatoes.
Cook for 15 minutes or until potatoes and chicken are tender.
Add green chilies and mint leaves. Spread boiled rice on top.
Sprinkle yellow and green color on different sides. Also spread 1 tsp Kewra water on top.
Let it simmer for 15 minutes or heat thorough.
Turn the heat off.
Transfer into a serving dish. Garnish with mix dry fruits.
