Recipe for Pasanda Biryani
Ingredients
- Beef pasanday 1 kg
- Thick greek yogurt 2 cups
- Red chilli powder 1 tsp
- Coriander powder 2 tsp
- Cumin seeds 2 tsp (dry roasted & crushed)
- Salt 2 tsp
- Nutmeg 1/2 tsp
- Mace 1/2 tsp
- Garam masala powder 1 tsp
- Kewra water 2 tbsp
- Ginger & garlic paste 2 tbsp
- Bullet green chili 3
- Fried onions 1/2 cup
- Rice 750g (boiled 80% with 3 tbsp salt)
- Fresh mint 1/4 cup
- Fresh coriander 1/4 cup
- Oil 1 cup
- Raw papaya paste 2 tbsp
Cooking Directions
In a bowl add beef pasanday, raw papaya, yogurt, fried onions, ginger & garlic paste, garam masala powder, nutmeg, mace, cumin, salt, red chili powder, coriander powder mix well, cover and leave it for 2 hours.
Heat oil add the pasanday wait for a boil, then cook covered on low flame till the meat is tender. (can add water if the meat is not tender).
Then add green chili, mint, coriander mix and close the flame.
Place the curry in a large pot add the kewra water mix, top it with boiled rice, wrap the lid with a tea towel cover the pot, first 5 minutes on high flame and then simmer on low flame for 5 minutes.
Mix and serve hot.
