Recipe for Very Berry Cupcakes
Ingredients
- 2 eggs
- 2 decilitiers sugar
- 3 deciliters flour
- 50 grams butter
- 1 deciliter cold water
- 2 teaspoons baking powder
- 2 teaspoons vanilla sugar
- Berries of your choice. (I used goji, blueberries, red currants and Swedish havtorn berries).
Cooking Directions
Set oven to 200 degrees Celsius.Melt the butter and let it cool off a little. Whisk eggs and sugar until "fluffy" and white. Mix flour, baking powder and vanilla sugar well.
Add butter, flour mixture and water little by little to the egg mixture. Grease a muffin tin, place paper molds in it if desired.
Put a few berries in each mold. Spoon the mixture over the berries, almost to the rim.
Bake in middle of oven about 15-20 minutes depending on the size cupcakes you are making. Test them with a tooth pick - if it comes out clean, they are done
