Recipe for Masala Bengan
Ingredients
- ½ kg brinjals
- ½ kg tomatoes
- 6 curry leaves
- 6 green chilies
- ½ bunch coriander
- ½ cup tamarind
- ½ cup oil
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tbsp grated coconut
- 2 tsp red chili flakes
- 2 tsp cumin seeds
- ½ tsp salt
Cooking Directions
Cut ½ kg brinjals into round slices and soak in salty water for some time.
Then take out of the water and place on absorbent sheet. Now fry them in pre heated ½ cup oil and keep aside.
Then add 2 tsp cumin seeds, 1 tsp mustard seeds and 6 curry leaves and keep aside. When spice is fragrant, add ½ kg tomatoes, 2 tsp red chili flakes, 1 tsp turmeric powder, 1 tsp coriander powder, 1 tbsp grated coconut, ½ cup tamarind paste and ½ tsp salt and stir together.
Then add fried brinjals, 6 green chilies and ½ bunch coriander and turn off the flame.
