Recipe for Bhagary Baingan (Brinjal)
Ingredients
- Brinjal -1/2kg small size round shape
- Onion-3 (Blended)
- Khashkhash-2tbsp
- Sesame seeds-1tbsp
- Coconut-1piece
- Peanut-8 to 10
- Onion-1 burn it for a while
- Green chili-4
- Coriander seeds-2tbsp
- Red chili-1tbsp
- Turmeric-1tsp
- Curry leaves-some leaves
- Ginger Garlic-1tbsp
- Salt-as required
- Tamarind thick paste-1cup
- Black seeds of onion (Kalonji)-a pinch
- For Bhagar
- Red chili whole-4
- Fenugreek seeds-pinch
- Cumin-1/2tsp
- Curry leaves-2
- Garlic cloves-3
- Oil-1cup
Cooking Directions
First of all take a pan and put khashkhash, sesame seeds, coconut, green chili, coriander seeds and peanuts now fry it without oil. Blend it in blender.
Remove the skin of burned onion and blend it in blender as well. Now combine onion mixture with khashkhash and dry the mixture.
After that wash brinjal and put cut on it to fill this paste,coriander and salt.
Now take a bowl and heat up oil, add all the ingredients of
Bhagar and cook it for 5 minutes. after that add blended onion and cook it well, when it become pinkish then add ginger garlic paste, green chili and cook it for a while now add paste filled brinjal with salt, 1 cup water and leave it for 5 minutes.
After 5 minutes add green chili, curry leaves, tamarind paste 1 cup water, black onion seeds (Kalonji) and cook it over slow flame.
