Recipe for Quick Raisin Pudding
Ingredients
- 2 cups (240 gm) all purpose plain flour
- 4 tsp (20 ml) baking powder
- 1/4 tsp (1.5 ml) salt
- 4 tbsp (60 ml) margarine or butter
- 2 cups (100 gm) raisins
- 1 cup (8 fl.oz) milk
- Syrup:
- 1/2 cup, packed (85 gm) light brown sugar
- 2 tbsp (30 ml) margarine or butter
- 3½ cups (28 fl.oz) boiling water
Cooking Directions
Preheat oven to 375°F or 190°C
Sift the flour, baking powder and salt together and then cut in the margarine or butter.
Stir in the raisins and then make into a dough using milk.
Spread the dough in a large baking dish and pour the syrup over it.
Bake for 40 minutes until risen and top has browned nicely.
