Recipe for Pineapple kesari baht

Ingredients

  • 1 cup sooji (rava)
  • 2 cups sugar or to taste
  • 2-21/2 cups water
  • 1 cup pineapple pieces (finely chopped)
  • a pinch cardamom powder
  • a pinch kesari colour
  • 1/2 cup ghee
  • Garnishing ingredients:
  • few cashewnuts
  • few badam
  • few pista

Cooking Directions

Heat a deep pan with 2 tbsp of ghee.

Roast the sooji in low flame till they turn into light golden yellow colour.

Remove from flame and keep aside.

In the same pan add 2 tbsp of ghee and roast the garnishing ingredients till they turn into golden yellow colour.

Remove from heat and broken into small pieces and keep aside.

Heat the same pan with water for 5 mins.

Add the chopped pineapple pieces and cook till soft.

Add a pinch of kesari colour and mix well and allow to boil.

Now add roasted rava and keep stiring. (add rava slowly in continuous flow while stiring)

Once the rava is cooked add sugar and keep stiring.

Now add the remaining ghee and mix well.

Finally garnish with garnishing ingredients and pineapple kesari bath is ready to serve.
