Recipe for Kashmiri Metha Pulao
Ingredients
- Sela rice ½ kg soaked for 1 hour
- Ghee ½ cup
- Green cardamom crushed 4
- Cloves 4
- Yellow color few drops
- Almonds and pistachio sliced 2 tbsp each
- Coconut slices 2 tbsp
- Red and green asharfi chopped 2 tbsp each
- Sugar ½ kg
- Water ½ cup
Cooking Directions
Heat ghee in a pan add cloves and green cardamom fry for 2 minutes.
Add ½ kg sugar with ½ cup water cook stirring until sugar dissolves completely.
Add fully boiled rice cook on high flame till water dries.
Add 1 tbsp Kewra water, sprinkle yellow color just a dash on 2 places.
Add your nuts, leave it on dum for 15 to 20 minutes.
Remove, serve garnish with red and green asharfi.
