Recipe for Chocolate Dipped Banana Doughnuts
Ingredients
- 1 ½ cup milk
- 1/3 cup butter
- 2 packages yeast
- 1/3 cup warm water
- 2 eggs, beaten
- 1 ½ tsp salt
- 1/3 cup sugar
- 1 tsp fresh ground nutmeg
- 3 bananas, mashed
- 1 tsp banana essence
- 6 ½ cup flour, sifted
- Icing sugar, to sprinkle
- For Chocolate Dip:
- 1 cup milk
- 2/3 cup cocoa
- ½ cup sugar
- 1/3 cup butter
- 1 tsp vanilla essence
Cooking Directions
Place milk in saucepan, warm on medium heat but don’t bring to a boil.
Remove from stove.
Place butter into a bowl and pour warm milk over it, and set aside until the butter melts and milk cools.
In a small bowl, place yeast and add hand hot water, stir lightly with a fork and let dissolve for 5 minutes.
In a stand mixer, pour yeast mixture in a bowl and add the milk and butter mixture and mix slightly with the paddle attachment.
Add eggs, sugar, salt, mashed bananas, banana essence, fresh nutmeg and half flour.
Combine ingredients for 5 minutes.
Change the paddle attachment to the dough hook attachment and add the rest of the flour and mix until the dough pulls away from the bowl and becomes smooth.
Place dough in a well-oiled bowl, cover and let rise for 1 hour.
On a well-floured surface, roll out dough about 1 cm thick.
Cut out the dough with doughnut cutter.
Set on floured baking sheet cover lightly with a tea towel and let rise for 30 minutes.
Pre-heat oil in a deep fryer to 175 degree C (350 degrees F).
Gently place doughnut in oil and cook for 45 – 60 seconds per side.
Transfer to a cooling rack and allow to cool.
Sprinkle with icing sugar
For Chocolate Dip:
Mix all ingredients in a saucepan on medium heat, but don’t bring to a boil.
Remove saucepan off the stove and allow to cool before serving.
