Recipe for Malay Vegetable Salad
Ingredients
- Green beans 100gm
- Cucumber (sliced) 1
- Onion (sliced) 1
- Boiled eggs 2
- Tomatoes (sliced) 2
- Salad Leaves 2-3
- Green chilies (chopped) 3-4
- Oil 2 tbsp
- To prepare sauce:
- Whole red chilies 3-4
- Roasted & chopped peanuts ½ cup
- Tamarind paste ½ cup
- Brown sugar 2 tbsp
- Salt to taste
Cooking Directions
To prepare sauce:
Take ½ cup tamarind paste, 3-4 red chilies, 2 tbsp brown sugar and salt in a blender and blend it.
Put the mixture in the pan and cook it for 3-4 minutes.
Take it out of the flame and cool it.
To prepare salad boil 100 gm green beans.
Take 2 tbsp oil in a pan, heat it and add beans and 2 eggs.
Slightly fry them. In a mixing bowl, add 1 cucumber, 1 onion, 2 tomatoes, 2-3 salad leaves, 3-4 chopped green chilies, green beans and eggs.
Add sauce from the top and mix everything together.
Dish it out in a salad platter and serve.
