Recipe for Key Lime Pie

Ingredients

  • For the crust:
  • 2½ cups digestive biscuits or 250 g, crumbled
  • ½ cup butter or 100 g, melted
  • For the filling:
  • 1 tin Sweetened Condensed Milk or 397 g
  • 1¼ cups liquid cream or 320 ml
  • 4 tablespoons lime juice
  • 3 tablespoons lemon juice
  • 1 teaspoon lime zest, grated
  • 1 tablespoon gelatine powder, dissolved in 2 tablespoons hot water

Cooking Directions

Combine biscuit crumbs and butter in a bowl, rub the ingredients to combine well, press the mixture over the base and sides of a 26cm loose bottom tart tin. Set in the fridge for 10 minutes.

Combine Sweetened Condensed Milk, liquid cream, lime juice, lemon juice and grated lime zest in a mixing bowl and whip for 4-5 minutes or until mixture becomes almost thick.

Pour the dissolved gelatine over with constant whipping until well combined then pour evenly over the prepared base.

Place in fridge for 3 hours until it sets then serve.
