Recipe for Key Lime Pie
Ingredients
- For the crust:
- 2½ cups digestive biscuits or 250 g, crumbled
- ½ cup butter or 100 g, melted
- For the filling:
- 1 tin Sweetened Condensed Milk or 397 g
- 1¼ cups liquid cream or 320 ml
- 4 tablespoons lime juice
- 3 tablespoons lemon juice
- 1 teaspoon lime zest, grated
- 1 tablespoon gelatine powder, dissolved in 2 tablespoons hot water
Cooking Directions
Combine biscuit crumbs and butter in a bowl, rub the ingredients to combine well, press the mixture over the base and sides of a 26cm loose bottom tart tin. Set in the fridge for 10 minutes.
Combine Sweetened Condensed Milk, liquid cream, lime juice, lemon juice and grated lime zest in a mixing bowl and whip for 4-5 minutes or until mixture becomes almost thick.
Pour the dissolved gelatine over with constant whipping until well combined then pour evenly over the prepared base.
Place in fridge for 3 hours until it sets then serve.
