Recipe for Chinnoti Biryani
Ingredients
- Chicken 1 kg
- Rice 750 gm
- Oil 3/4 cup
- Brown onion 1/2 cup
- Chili powder 1 tbsp
- Yogurt 1 cup
- Whole green chilies 8-10
- Cloves 6
- Green cardamom 6
- Green cardamom powder 1/2 tsp
- Nutmeg grinded 1/4 tsp
- Mace grinded 1/4 tsp
- All bukara 12
- Water 2 cups
- Salt 1 tsp
- All spice 1-1/2 tsp
- Kewra water 1 tsp
Cooking Directions
For making rice:
Boil water with salt. Cook rice approx and drain water.
For making chicken:
Heat oil, put brown onion, yogurt, chicken, cloves, green cardamom, whole green chilies, chili powder and salt, cover it and cook chicken with 1 cup water for 20 minutes.
When water dries, then cook chicken with aloo bukhara, green cardamom powder, nutmeg grinded and mace grinded on medium flame.
In end, add all spice and kewra water.
Put boiled rice and zarda color and keep on simmer for 15 minutes.
