Recipe for Shortbread Fingers
Ingredients
- Flour4 oz
- Almonds ground1 oz
- Semolina1 oz
- Butter4 oz
- Caster sugar2 oz
- Almond essence½ tsp
- Flaked almonds1 oz
- Caster sugar to dust
Cooking Directions
Mix flour, ground almonds and semolina in a bowl, add butter, sugar and almond essence, mix together till mixture resembles breadcrumbs,
knead till smooth. Press dough in a greased tin and level the surface with a spoon. Sprinkle flaked almonds.
Bake at 160 degrees C for 30 minutes or till pale golden. Mark into fingers and sprinkle caster sugar and let cool in tin, lift out carefully when cold and store in air tight tin.
