Recipe for Punjabi Chhole
Ingredients
- 1 Cup of boiled chickpeas (You can even use the canned ones)
- Tomatoes- 1 cup finely chopped
- Garlic- 2-3 finely minced
- Onions- 1 cup finely chopped
- Salt to taste
- MDH or Everesh Chhole masala – 1 tbsp
- Red chilli powder- 1 tbsp
- Turmeric- 1 pinch
- Coriander powder- 1 tbsp
- Water if needed
- Oil- 3 tbsp
- Cilantro and lemon to garnish
Cooking Directions
Boil the chickpeas very well. If they are hard, the whole dish will spoil.
Check by crushing them with your first finger and thumb. It should mash well, that much softness should be there.
In a pan take oil, and add garlic and onions to it. Once the temperature rises they will start turning golden brown in color. Once they are cooked well add tomatoes to it. You can also add fresh tomatoes puree.
Add salt, turmeric powder, red chilli powder, coriander powder and chholle masala to this. Let that simmer for a while till you see oil coming from sides.
Then add the cooked chickpeas to it. Let the mixture boil well for few minutes and make sure its not too watery. If there is less water add to it.
Garnish well with lemon and cilantro. Its ready to serve.
