Recipe for Tamarind Chutney

Ingredients

  • 3 big cups of dates (seedless)
  • 1 cup of tamarind puree (without any seeds)
  • salt to taste
  • 2 tbsp of red chilli powder
  • 3 tbsp of cumin-coriander powder
  • jaggery/sugar only if needed

Cooking Directions

Method: Pressure cook the dates and tamarind paste in a cooker with enough quantity of water. Make sure you run at least 5-6 whistles.

Then let the mix sit for at least an hour so that the sour taste of tamarind will evenly blend with dates.

Once the cooker cools down, open it and blend the entire mixture in a blender finely.

The paste should be very even. Now put that mixture of paste in another container on a stove, and add salt, chilli powder, cumin-coriander powder to it.

Let the mixture boil for enough time till you see boils popping out.

Let this mix sit and cool now, you can refrigerate it for reuse. And freeze it for longer use. As and when needed take the mix out and add little water for use.
