Recipe for Aloo Baingan
Ingredients
- Eggplant ( long cylindrical purple colored slit in sticks)-250 gm
- Potato (cut lengthwise in sticks)-2 no’s
- Garlic (finely chopped)-4 cloves
- Ginger (finely chopped)-1 tsp
- Tomato (finely chopped)-2 no’s
- Green chilly (finely chopped)-4 no’s
- Spices:
- Turmeric powder-1 tsp
- Coriander powder-1 tsp
- Red chilly powder-1 tsp
- Salt to taste
- Garam masala-1 tsp
- Vegetable oil-4 tbsp
- Chopped coriander leaves-a handful
Cooking Directions
Heat oil in a wok or pan , add cumin seeds , ginger and garlic cloves.Saute for 1 minute.
Add potato slits ,stir and let it cook for 10 minutes till potato are tender.
Now cornered the potatoes on one side.Add tomatoes and chillies In the center. Add all spices and salt.Stir the with tomatoes.
Add eggplant slits over the tomatoes and cover them with potatoes.
Let it cook for 10 minutes without stirring (with closed lid).Stir and cook for 2 minutes.
Remove from heat,add chopped coriander. Serve with chapati , rice or bread.
