• 1/2 lb bulk sausage
• 8 eggs
• 2 Tbsp milk
• 1 Tbsp butter
• 1 (16-oz) flatbread crust
• 1/3 cup grated cheddar cheese
• 2 cups arugula
• 1 Tbsp olive oil
• 1 Tbsp lemon juice

Cook sausage in a medium skillet until done, breaking it up with a spoon as it cooks. Transfer to a plate. Wipe skillet.

Beat eggs with milk in a medium bowl. In same skillet, heat butter over medium-low for 30 seconds.

Add egg mixture and scramble for 4 minutes or until set. Remove from heat.

Arrange flatbread crust on a parchment-lined baking sheet. Top with half the cheese, then eggs, then sausage.

Sprinkle with remaining cheese. Bake for 10 minutes or until cheese is melted and crust is golden.

Toss arugula with oil and lemon juice. Slice pizza, topping each slice with some arugula
