Recipe for Vegetable Muffins For Babies
Ingredients
- Capsicum (finely cut) 1
- Tomatoes (finely cut) 2
- Eggs (boiled and cut) 2
- Potatoes (boiled and cut) 2
- Samosa strips 6
- Peas (boiled) 1cup
- Mozzarella cheese (grated) 1 cup
- Tomato ketchup ½ cup
- Crushed red chillies 1 tsp
- Oregano 1 tsp
- Black pepper powder ½ tsp
- Tamarind pulp 2tbsp
- Salt ½ tsp, butter 50 grams.
Cooking Directions
Mix potatoes, peas, eggs, capsicums, tomatoes, salt, pepper, red chillies, ketchup and tamarind in a bowl.
Cut samosa strips into squares. Place in hollows of greased muffin tray.
Spread butter on strips and repeat process with more strips twice, so that there are 3 buttered strips in each muffin holder.
Top with cooked vegetables and cheese and sprinkle oregano. Place tray in pre-heated oven at 180oc for 10 minutes and remove.
