• 1 red pepper (capsicum), seeded and diced
• 1 green pepper (capsicum), seeded and diced
• 1 large head chicory, thinly sliced
• ½ cucumber, diced
• 1 quantity Vinaigrette Dressing
• 1 teaspoon poppy seeds, to garnish

Remove skins from the sausages and dice. Put lettuce into a glass serving bowl, scatter over half the diced sausage.

Add a layer of peppers, then remaining diced sausage. Add chicory and cucumber, then pour over dressing.

Serve sprinkled with poppy seeds.
