• ½ unsalted butter
• 1 egg
• 1 cup brown sugar
• 3 tbsps caster sugar
• 1 tbsp vanilla essence
• ½ tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 ¾ cup flour
• 1 ½ tsp coffee powder
• 8 oz chocolate chips

Cream butter with both the sugars till fluffy, add in egg and essence, fold in sifted flour, baking soda, baking powder, salt, add the coffee powder and fold in the chips, mix all well.

Pour a large tbsp on a baking tray leaving space for them to spread and bake at 180 degrees C for 8-10 minutes for a soft cookie or 10-12 minutes for a crisp cookie. Cool on a wire rack.
