Recipe for Potato and Sausage Salad
Ingredients
- Potatoes 8
- Vinegar 1 tsp (white wine)
- Onion 1 medium (finely chopped)
- Parsley 1 tbsp (freshly chopped)
- Fresh tarragon 1 tbsp (or 1 tsp dried)
- Chicken or beef 3 sausages
- Olives a handful (sliced) (optional)
- For the Vinaigrette Dressing:
- Dijon mustard 2 tsp
- Vinegar 1 tbsp (white wine)
- Olive oil 5 tbsp (extra virgin)
- Salt to taste
- Freshly ground black pepper to taste
Cooking Directions
Boil the potatoes in salted water until tender.
Sieve the potatoes and pour cold water over them.
Cut into 1/4 inch slices and add vinegar, olives if using and chopped onion.
For Vinaigrette Dressing: Mix mustard and vinegar in a small bowl, then gradually whisk in oil drop by drop.
Season with salt and pepper and pour over the potatoes.
Add the chopped herbs and toss well until combined.
Slice the sausage, sauté in a little oil, cool and toss into the potatoes.
Season with salt and pepper to taste and serve at room temperature garnished with parsley sprigs.
