Recipe for Chicken and Vegetable Kebabs

Ingredients

  • 600 grams Boneless chicken, 1 1/2 inch cubes
  • 4 medium size Tomato
  • 1 Long Brinjal, 1 1/2 inch cubes
  • 3 large Green chilli, 1 1/2 inch pieces
  • Salt to taste
  • 1 teaspoon mixed herbs
  • 7-8 cloves chopped Garlic
  • 1 teaspoon Red chilli flakes
  • Oil to baste

Cooking Directions

Light the coals inside the barbecue.

Marinate the chicken cubes with salt and mixed herbs for fifteen minutes.

Halve the tomatoes and further cut each half into three pieces vertically.

Take half the chicken cubes a single bowl, add garlic and mix.
Consider the remaining chicken cubes in another bowl, add crushed dry red chillies and crushed roasted dry red chillies and mix.

Require a skewer and string the kebab thus: a brinjal cube, chicken cube in the first bowl, green chilli piece, tomato piece, chicken cube in the second bowl, green chilli piece, tomato piece lastly a brinjal cube.

Similarly make more kebabs using the chicken cubes from the bowls.

Place the skewers for the barbeque grill and cook, basting with oil every once in awhile and turning the skewers so that the kebabs get cooked at all times.
