Recipe for Tikka Chicken Kebabs
Ingredients
- 4 clean breasts, diced
- 2 crushed garlic cloves
- 2 tbsp of grated ginger
- 1 minced green pepper
- 6 tbsp of natural yogurt
- 1 tbsp. of tomato paste
- 1 tbsp of cumin
- 1 tbsp of coriander
- 1 tbsp of turmeric
- 1 large, peeled and diced mango (not too ripe)
- 1 tbsp of lemon juice
- Salt and pepper to taste
- 8 kebabs (skewers, metallic or wooden)
- Fresh coriander to garnish (minced)
Cooking Directions
Prepare the breast (wash, clean and cut). Marinate the chicken cubes with the garlic, ginger, pepper, yogurt, tomato paste and spices.
Season everything to taste. Place in the fridge for 2 hours. If you are using wooden skewers, soak them in cold water for at least 45 minutes. This will prevent burning.
Dice the mango and splash the lemon juice. Do this just a few minutes before preparing the brochettes so the mango doesn''t release its liquid, but enough time before so it marinates in the lemon a little.
We also recommend that the mango is not too ripe, to make it easier to cut and so it keeps its shape. Preheat the grill or broiler.
If you are using the oven, it is best to line the tray with foil so the liquid the brochettes release fall there.
Assemble the brochettes alternating the chicken and mango, trying not squeeze them together too tight. Place them on a rack or baking tray for 6-7 minutes on each side.
Spread the yogurt paste (if you have some left when marinating). To know if the chicken is ready is to check if the meat is not pink anymore and if the juices it releases are clear.
