Recipe for Lemon Cookies

Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 1 and 1/2 teaspoon baking powder
  • 1 teaspoon (equivalent to 1 large lemon) lemon zest
  • 8 tablespoons (equivalent to 1 stick) unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 3/4 teaspoon lemon extract *
  • 1/2 cup powdered sugar (for rolling)

Cooking Directions

Preheat the oven to 350 degrees F. In a medium bowl, whisk together the flour, baking powder, and lemon zest. Set this bowl aside.

In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time and mix well.Add the lemon extract and mix again.

Mix in the dry ingredients, only until just combined. Cover and chill the dough for a minimum of 2 hours.

Roll the chilled dough into balls and then roll in the powdered sugar.

Place the cookie balls on a baking sheet lined with parchment paper, leaving 2 inches of space between them.

Bake for 12 to 14 minutes in a preheated oven or until puffed and just golden brown along the edges of the cookies.

Cool on the baking sheet (about 2 minutes) and then transfer onto a cooling rack.

Right before serving cover with additional powdered sugar.
Mix and bake.
