Recipe for PIZZA WITH EGGS, ROASTED PEPPERS, AND OLIVES
Ingredients
- Olive oil
- 3/4 cup roasted red peppers
- 1/3 cup pitted, chopped kalamata olives
- 1 1/2 tsp chopped fresh rosemary
- 1 cup finely grated Parmesan
- 4 red onion rings
- 4 eggs
- Salt and pepper
- Arugula
Cooking Directions
Place a pizza stone or baking sheet in oven; preheat to 500°F.
Sprinkle a pizza paddle or rimless baking sheet generously with cornmeal.
Roll out 1 portion refrigerated pizza dough on a floured surface to a 12-inch round; transfer to cornmeal-dusted paddle or baking sheet.
Brush dough with olive oil; scatter with 3/4 cup roasted red peppers and 1/3 cup pitted, chopped kalamata olives.
Add 1 1/2 tsp chopped fresh rosemary and 1 cup finely grated Parmesan. Arrange 4 red onion rings on pie, evenly spaced.
Slide pizza onto hot stone or baking sheet; bake until lightly browned but not crisp, about 7 minutes.
Remove from oven and crack 1 egg into each onion ring. Return to oven and bake until eggs are softly set and crust is golden, about 6 minutes.
Add salt and pepper to taste. Top with a handful of arugula.
